1. In a large crock pot insert, place the olive oil, onion, celery and garlic.
2. Cover and place the insert into the microwave.
3. Cook for 5 minutes or until the vegetables are tender.
4. Add the tomatoes, tomato sauce and seasonings to taste.
5. Cook for an additional 12 minutes or until the sauce starts to bubble.
6. Remove the insert from the microwave and return to the crock pot.
7. Set the temperature to high.
8. In a large bowl, crumble the ground beef.
9. Add the eggs, garlic, parmesan and 1/2 cup bread crumbs.
10. Mix gently to combine.
11. Add more bread crumbs a little at a time until the meat stays soft but holds its shape.
12. Shape the meatballs.
13. Place the meatballs on a plate and cover it with wax paper.
14. Microwave for 6 to 7 minutes.
15. Return the meatballs to the crock pot with the tomato mixture.
16. Turn the dial to low and cook for 5 to 6 hours, stirring occasionally. |
