Meatballs in Spaghetti Sauce

 
Ingredients -
2 pounds Lean Ground Beef
1 small Yellow Onion, chopped
1 tablespoon Fresh Parmesan Cheese, grated
1 cup Bread Crumbs
2 Large Eggs
2 tablespoons Parsley Flakes
2 Garlic Cloves, minced
1/4 cup Whole Milk
Coarse Salt
Fresh Ground Black Pepper

Spaghetti Sauce:
3 tablespoons Vegetable Oil
1 tablespoons Parsley Flakes
1 large Garlic Clove, minced
2 (29 ounces) cans Tomato Puree
2 (6 ounces) cans Tomato Paste
1 teaspoon Sugar
2 cups Water
1 medium Carrot, chopped
 
Preparation:

Meatballs:

1. In a large bowl, combine the beef, onion, fresh parmesan, bread crumbs, eggs, parsley, garlic, milk, salt and pepper.

2. Mix thoroughly to combine.

3. Shape the meat into golf ball sized meatballs.

4. Place the meatballs on an oven safe baking sheet.

5. Broil for 3 to 4 minutes.

6. Flip the meatballs over and broil for an additional 3 minutes more.

7. Add to the spaghetti sauce and stir to coat.

Spaghetti Sauce:

8. With vegetable oil, cook the tomato paste until the bright red tomato color turns dark red.

9. Add the parsley, garlic, tomato puree, sugar, water and carrot.

10. Cover and simmer for 3 to 4 hours.

11. Serve over hot cooked pasta.
