Spaghetti Sauce with Sausage and Mushrooms

 
Ingredients -
4 tablespoons Extra Virgin Olive Oil
2 pounds Italian Sausage, casings removed
6 Garlic Cloves, minced
1 Yellow Onion, chopped
1 1/2 teaspoons Oregano
1/4 teaspoon Marjoram
1/2 teaspoon Basil
1/4 teaspoon Thyme
1/4 teaspoon Fresh Ground Black Pepper
Coarse Salt
1 pound Cremini Mushrooms
1/2 cups Carrots, grated
1-2 Red Bell Peppers, seeded, diced
2 tablespoons Parmesan Cheese, grated
2 (36 ounces each) cans Tomato Sauce
1 teaspoon Honey
Fresh Parsley
 
Preparation:

1. Tear the sausage into bite size pieces.

2. In a hot skillet, brown the meat on all sides.

3. Drain the excess oil and reserve.

4. Add 4 tablespoons of the reserved oil to a large stock pot.

5. Add the garlic, oregano, marjoram, basil, thyme, pepper and onions.

6. Cook until the onions are tender, making sure not to burn the garlic.

7. Add the chopped, cleaned mushrooms, chopped carrots and bell peppers.

8. Saute until the vegetables are soft, but not mushy.

9. Sprinkle the mixture with the parmesan cheese.

10. Pour in the tomato sauce.

11. Stir in the sausage.

12. Simmer, covered, for 1 hour making sure not to boil the sauce.

13. Prepare the pasta according to the directions on the package.

14. Serve the sauce over the noodles.
